They are honoured for their bravery.

Pearson, (a Canadian UN ambassador), was awarded the Noble Peace Prize for his successful idea to establish a UN Emergency Force to resolve the Suez Crisis. This was when France, Britain, and Israel all attempted to invade Egypt for political reasons. But with the help of negotiation, (as opposed to war), by the UN Emergency Force, all withdrew on peaceful grounds. This pertains to human rights because Pearson's idea stopped a potential war, which would have put people's lives in jeopardy.

Pierre Elliott Trudeau goes to China on a Peace Mission
Canada’s Prime Minister, back in 1973, went on a peace mission to negotiate and release tension with Communist China. This has to do with Human Rights because Trudeau created diplomatic relations between China and Canada, which has led to the immigration of the Chinese to Canada. Since Canada is a democracy, as opposed to communist, those who have left China are entitled to many more human rights than they were in their motherland.
