    First hour of my Genius hour research

    In my first hour of researching my project, I came across an authentic Italian sauce recipe that I wasn't able to post (swore I wouldn't share the recipe, it was a friends family secret). I didn't realize how long authentic sauce takes to make. I feel that the sauce recipe will be the secret to my successful, delicious meal.

    Second hour of my Genius hour project

    Well it turns out I can make delicious sauce! This is a great sign in regards to moving forward with my genius hour project. Looking into proper breading techniques, through some research, it seems to me that putting the eggplant through egg yolks only, is the best method. This method My next step will be to see just exactly how much parmigiana/ mozzarella cheese is necessary for the project. I'm also interested in researching how thick the eggplant must sliced .

    Third hour of my Genius hour research

    This week I realized that eggplant was a firm vegetable and when I ate this dish, I remembered that the eggplant was soft like a lasagna noodle. I discovered the secret in making that eggplant soft. After many discussions with older, wiser Italian woman, they all had similar procedures in making that eggplant soft. Turns out that after the eggplant is cut into 1/4" thick slices, some salt was added on the eggplant to remove the moisture.

    Project Completed

    Well, turns out I was able to make a delicious authentic Italian eggplant parmigiana. I'm not gonna lie, it did take extensive research and it took about 3 hours to prepare, and an hour to bake. I must say it was worth every minute!
