    Did not have restaurants; meals were a special time - banquets and gatherings.

    The Middle Ages

    A long slow period of change in Europe; change of God view (spirits inhabiting the forests no longer existed); travel was extremely dangerous.

    Renaissance/ French Revolution

    Trading spices became very popular; first restaurants and cafes opened.

    Colonial North America

    First Europeans to settle in N. America were city dwellers; poorly equipped for farming; Boston and New York became major centers of trade but people rarely travelled from their homes.

    Industrial Revolution

    Was the start of catering and they created North America's first restaurant.

    Gilded Ages

    The new scientific revolution known as the Enlightenment Period; people poured in CA after gold was discovered so people developed fine dining restaurants - high society dined out in style.

    20th Century

    Employment was at an all time high in the US; 1930's brought an important advancement in the food service industry (and transportation helped). Hotels became more popular.
