The coffee ceremony is all about the process of making and serving the coffee. Though in our culture this process is not of much importance, in theirs it's a lengthy event, taking up about 3 hours, demonstrating great skill. The one who performs the process is a young woman. For the special occasion, she is garbed in a long white dress that is embroidered with colorful thread. The cereomony started with the rosating of the fresh, green coffee beans on a metal plate. It's heated on lit charcoal.

The hostess must move the beans a lot to prevent them from burning. Once the beans are rosated, she offers the beans to all i the room to smell. Next, she takes the beans to the kitchen to be ground with something like a mortar and pestle. The grounds are then brewed in a jebena, a clay coffee pot, over hot coals. This part is difficult as she can't allow the pot to overflow. Once it's brewed, the jebena must sit, letting the ground settle. A filter, typically made of horse hair, is placed over

Three rounds of coffee are served, called abol, tona, and baraka, which according to Ethiopian FOLKLORE (folklore- the unwritten literature (stories, proverbs, riddles, and songs) of a culture) are the names of 3 goats that originally got the coffee thousands of

The ritual is really just the process of preparing to eat the chicken stew, called pinikpikan, afterward. To prepare the pinikpikan, the chicken must be beaten live. Keep in mind, it's beaten lightly- the chicken's bones cannot break and it doesn't bleed. The squawking of the chicken is an important part of the ritual as it calls the attention of the spirits.
