  • The Treatise on Domestic Economy for the use of Young Ladies at Home

    -This was a book published by Catherine Beecher. It was one of the first books educating about home economics and was called the first complete guide to housekeeping in America

    Wilbur Olin Atwater

    -Received PH D from Yale in 1869 for studies on the chemical composition of corn
    -established first argricultural experimental station in the USA
    -studied the metabolism of mammals using the cycle ergometer. Which is still used today in modern society in Nutrition/FACS studies
    -convinced united states government to fund studies on human nutrition
  • Rumford Kitchen

    -The World’s Fair took place in Chicago and Ellen Swallow Richards was invited to cook within the Women’s building but she was adamant that her work was meant for men and women and thus created the Rumford Kitchen

    Martha Van Rensselaer

    -Believed women could effect change in American life
    -was elected school commissioner of Cattaraugus County, New York, a position usually held by men. She held this position from 1893-1899
    - she organized an extension program for New York State's rural women. Under Van Rensselaer's leadership, the program blossomed. Enrolled 20,000 across New York
    -in the World War I, she directed the Home Conservation Division of the United States Food Administration

    Caroline Hunt

    -Appointed as the first professor of home economics at the University of Wisconsin
    -majored in Latin and enrolled in a variety of science and language courses. After graduation, she taught chemistry and physics at two high schools
    -she collected data for two studies: The Italians in Chicago: A Social and Economic Study
    -was published by the US Department of Agriculture
    -she authored numerous pamphlets for the US Department of Agriculture, Published The Life of Ellen H. Richard

    Flora Rose

    -wrote letters to administrators at both Stanford and Cornell University to start home economics courses
    -became lecturer in nutrition at Cornell
    -with Martha Rensselaer rose co-directed the fledgling department
    -Rose taught and served, in effect, as the dean of the student body
    -They fought with the university administration for equitable budget allocations and space on campus

    Cornell University FACS Archives

    -Home economics at Cornell began as part of the Extension Service in 1900, with the Farmers’ Wives Reading Course
    -an Rensselaer, Bailey, and Anna Botsford Comstock gave three courses within the College of Agriculture relating to home and family life
    -The department became a school in 1919, and, in 1925, the first state-chartered College of Home Economics in the country. Martha Van Rensselaer and Flora Rose were named co-directors.

    -The Academy was conceptualized as the American Dietetic Association at a meeting in Cleveland, Ohio, in 1917, ultimately leading to its formal incorporation and first central office in Chicago

    -AAFCS invited Alliance for Family & Consumer Sciences organizations to be a part of the Family & Consumer Sciences Branding Initiative, where they would develop messages to clearly communicate the value of the family and consumer sciences field, as well as an icon that would convey the essence of the field

    AAFCS honors Founder Ellen Swallow Richards by celebrating FCS Day on her birthday. This day provides information, tools, and research on the benefits of families preparing and eating healthy.
