    This period was around the Great depression and WW2. Americans developed a desire for more meat, dairy, and sweets. Americans wanted to do more than make do during the tough times and began the beginnings of low fat foods. Many ingredients were often supplemented such as adding oatmeal and breadcrumbs to meatloaf.

    One dish meals became common because people would prefer convenience to nutrition. Many new products that were cheap and easy were created by big companies.

    Americans looked to government assistance, formed customer groups, and tried to better understand the customer's role in food selection. FDA and USDA tried to control food quality and content more closely. A White House Conference in 1969 changed emphasis on nutrition and good food. The Fair Practices Labeling Act led to nutrition labeling and a change in knowing what food was good for you and what wasn't.

    Americans looked towards more international foods. Americans bought seasonal food and were interested in fresher food forms. New testing would find food-borne organisms. The food sector provided safer and fresher foods. Ethnic foods widened the sources for new products. The concepts of nutraceuticals and biotechnology entered the food science discussion and continues to dominate the food based discussions for the next decade.
