Salt was found to take away moisture from the food and make the food tastier. The same with sugar. Food was soaked in honey to preserve it. However sometimes too much salt or sugar backfired not only making the food too sweet or salty, or even backfiring and making the food last less. -

Food in medieval times could also be preserved by cutting off the oxygen from the food. They way they did it back then is a lot like now. They put the food item in a glass jar and tried to make the lid as tight as possible to cut off all oxygen. This way was very inefficient back then because some lids for jars were not made to the right size and lids were to be hand sealed, still allowing some air to go into the jar. -
