Ellen was know for perusing the field of sanitary engineering. She developed an interest in chemistry while attending Vassar College. She then become the first female students to attend MIT in 1871 as a "special student". She earned her second bachelor's degree from MIT along with her master's degree from Vassar College, and continued for a Ph. D. but was not awarded due to being a woman. In 1883 she was appointed assistant chemist at MIT and in 1890 become an instructor. -
W.O. Atwater is considered the "Father of Nutrition". He earned a Ph. D in chemistry while at Yale. He wrote nutrition bulletins for Ellen and created the Bomb Calorimeter which was used to measure the calorie value of solid and liquid samples. He studied human nutrition and metabolism. -
The Morrill Act of 1862 was passed on July 2, 1962 is named after Vermont Congressman Justin Smith Morrill after he proposed the act. It provided grants of land to states to finance the establishments of colleges. Each state was givens 30,000 acres per each of its congressional seat. This made it possible for new western states to establish colleges. These colleges specialized in agriculture and mechanic arts. They were known as A&M Colleges.

The University of Arkansas founded in 1871 was known as Arkansas Industrial University or "The Hill". It was changed to the University of Arkansas in 1899. Founded in 1873 and opened in 1875 was Branch Normal College (affiliate with Arkansas Industrial University. In 1927 is become Arkansas Agricultural, Mechanical & Normal College (Aransas AM&N). In 1929 it was moved to Pine Bluff (it's present location). In 1972 it took the name as University of Arkansas at Pine Bluff. -
She was the first African American to graduate from New Mexico State University. She was not allowed in the classroom, so she took notes from the hallway and was not allowed to walk at graduation. She became a teacher to black students during the day, and taught their parents at night in home economics. New Mexico State University recognized her for her work and named a campus street after her in 1961, an English building in 2005, and was awarded a honorary doctorate degree in 1980. Died at 108. -
It was developed by Ellen Swallow at the 1893 Colombian Exposition. It was created to show the composition of materials for human food, materials most available for nutrition, and the quantity necessary. -
In 1899 the first conference was held to discuss home economics education. There were ten meetings to discuss the advances in home economics and developing guiding principles of what is was and should be. Science helped drive forward education on bacteria and begin examining things under a microscope. -
Martha was a Cornell University professor and attended the Lake Placid Conference in 1899. She developed Cooperative Extension Service programs at Cornell in 1900. She was the president of AAFCS from 1914 to 1916. She believed that by adopting new scientific strategies to their daily farm life tasks is could cause less of a burden. Martha, along side of Flora Rose, was invited to run the Department of Home Economics. -
In 1888, she had a bachelor's degree in chemistry from Northwestern. She conduced two important studies of immigrant and ethnic populations in Chicago. She was a professor at the University of Wisconsin from 1903-1908.

Future Homemakers of American was founded in 1945 at a convention in Chicago. It was a national student organization aimed at preparing today's students to be tomorrow's leaders in the home and workplace. In 1999 FHA was changed to FCCLA or Family, Career, and Community Leaders of America. In 1983 FCCLA began hosting series of regional cluster meetings across the United States, and STAR events were introduced. -

Also known as the Rehabilitation Act of 1973, it extend and revise the authorization of grants to states for vocational rehabilitations service, expanded special federal responsibilities and research and training programs with respect to those with disabilities, created links between state vocational rehabilitation programs and workforce investment, and established special responsibilities for the Secretary of Education to coordinate all activities to respect those with disabilities.

The Vocational Amendment of 1976 requires that states receiving federal funding for vocational education to develop and carry out activities and program to eliminate gender bias, stereotyping, and discrimination in vocational education.

The Carl Perkins Act authorizes federal funds to support vocational education programs. One goal for the act is to improve the access of either those who have been underserved or those who have greater than average educational needs. As of 2006 it was referred to as the Strengthening Career and Technical Education for the 21st Century Act. -
In 1909 American Home Economics Association was founded by Ellen Swallow. The name change in 1994. For over 100 years members have been working to improve the quality and standards of individual and family life. FCS consist of five major areas; housing and interior design, clothing and textiles, consumer education, resource management, child development, family studies, food, and nutrition.
