    Fred Harvey replaced all male staff after a midnight brawl with his waiters in Raton, New Mexico. Harvey took advise and hired only female waitresses. Although, he didn't hire just any woman. Fred Harvey was one of the first to hire only "good character" girls, they also had to have a high school education. These young ladies had too be refined, and trained in etiquette.

    When Fred Harvey passed away, he left the company to his son, Ford Ferguson Harvey and his son-in-law, John Frederick Huckel. At his death the Harvey Trading Company had 26 restaurants, 16 hotels/restaurants, and 20 railroad dining cars.
