When the person eats the food, the body creates an antibody that detects the harmful substances and attacks them.

The anitobdy attaches itself to cells found in tissues to prepare the body if that food enters the body again.

If the food enters the body again, the food binds to the antibodies and sends out signals to the rest of the body to release histamine.

The histamine that is released causes the reaction which can include irratation and swelling.

The result of the irritation or swelling depends on the person, but varies from hives, shortness of breath, to anaphylaxis.
